Metz Culinary Management (Metz) helped the Brookings Institution in Washington, D.C. celebrate Black History Month by hosting a special luncheon on February 5. The event featured an authentic and culturally rich menu created by Metz Corporate Chef Xavier Smith. Guests were offered West African Peanut Stew, Suya Beef with Sweet Potato and Onions, Suya Sauce, Jollof Rice, Fried Cabbage, and Sweet Cornbread, all inspired by Chef Xavier’s personal heritage.
“This event was special, not only because of the incredible response but because it gave me the opportunity to share dishes that aren’t as widely known,” Chef Xavier said. “I wanted to go beyond the typical soul food offerings and introduce flavors and traditions that celebrate the depth and diversity of African cuisine.”
A resounding success, the luncheon drew an enthusiastic crowd of 120 and sold out in little over an hour. Brookings staff expressed appreciation for the menu, with many commenting on how much they learned about the culinary traditions represented.

This is one of several events taking place on the first Wednesday of each month that celebrate food, culture, and heritage at Brookings Institution. Future celebrations include Women’s History Month, Arab Heritage Month, Asian American Pacific Island Heritage Month, and more.
